ProGurt with Hot Charred Tomatoes.

A delicious idea for using your ProGurt as a starter or mezze. Also works well served as an accompaniment with Roast Leg of Lamb.
Juicy hot tomatoes & Cold Yoghurt . Delicious served with Crusty Bread.
350 gms cherry tomatoes
3 cloves of garlic
3 Tlb Olive Oil
3/4 tsp cumin seeds
1/2 tsp brown sugar
3 sprigs of thyme
5 gm fresh oregano - 3 sprigs for cooking and rest for serving as garanish
1 Lemon - Shave skin off 1.2 to get 3 strips no white. Grate the rest finely 1/2 to 1 tsp zest.
350 gms thick Progurt or Greek Yoghurt - Nice and cold
1tsp chilli flakes
Salt & Pepper
TO MAKE:
Heat the over to 200 degrees. Works well in an air fryer.
Place tomatoes in a mixing bowl with olive oil, cumin seeds, garlic, sugar, thyme and oregano sprigs, lemon strips. 1/2 tsp salt and a good grind of pepper.
Toss to combine well. The transfer to a baking tray. Large enough for the tomatoes to fit spread out in one layer.
Roast for 20 mins. Until tomatoes begin to blister. Liquid should be bubbling.
Turn the grill on for 6 - 8 mins until tomatoes start to blacken.
While Tomatoes are cooking: combine the ProGurt with the grated lemon zest and 1/4 tsp salt. Keep cold until ready to serve.
TO SERVE:
Once tomatoes are roasted - spread the yoghurt out onto a platter with a small lip creating a dip in the middle with a spoon. Spoon over the hot tomatoes along with their juices, lemon skin, garlic and herbs. Finish with sprigs of oregano and chilli flakes.
Serve immediately with some fresh bread or with your roast.
