L'Reuteri Cottage Cheese - A simple delicious Fermented Farmer's Cheese

 

What we get in the shops today is nothing like the old fashioned traditional cottage cheese that used to be available.   

Make your own version at home using your ProGurt Classic  - Full of L'Reuteri. 

Yoghurt will give you a lovely thick , high protein cheese.  Delicious to eat and very filling. 

1 Jar of  Classic ProGurt

A Bowl  - Glass is best unless you have a straining jug.  A Glass Jug also works. 

A sieve lined with a piece of muslin or a special cheese straining cloth. 

A lid to cover the mixture  - you can use a pot lid or even a large plate. 

 

Pour the contents of the Jar - the ProGurt into the lined sieve.  

Let this drain slowly and top up the sieve slowly if there was not enough space to empty the entire jar. 

Let this drain overnight.   The whey will collect in the bottom of the bowl

This can be discarded but remember this is highly nutritious and can be added to smoothies or even used on your skin.    It is completely edible. 

The strained Protein will collect on the cloth in the sieve.   Carefully turn this out into another bowl.   It will be quiet chunky. 

Now you can store this in the refrigerator until ready to use.

You can use this just like store bought cottage cheese.   This will keep for a long time.  We have tested this for over 1 month and still perfect.  It is unlikely to last this long because it is very moorish. 

Add herbs or just eat it plain.     use on a baked potato as a topping - delicious. 

Make a sweet topping by adding some honey or some berries.   Top a piece of sour dough toast with this delicious satisfying cheese.
