You will need

  • ½ cup butter, softened
  • 2–3 Tbsp herbs of your choice, finely chopped (rosemary, sage, parsley, basil, etc.)
  • 2 cloves garlic, crushed or finely chopped (optional, but really lovely)
  • ½ tsp salt (optional)
  • 1 Tbsp honey

How to make your whipped herbal butter

  1. Soften the butter. Take the butter out of the fridge and let it sit at room temperature until it’s soft but not melted.
  2. Prepare your herbs. Rinse and dry your herbs well, then finely chop them. Crush or chop the garlic if you’re using it.
  3. Whip it together. In a small bowl, add the softened butter, chopped herbs, garlic, honey and salt. Use a fork or spoon to mix and “whip” everything together until well combined and fluffy.
  4. Taste and adjust. Taste a little on a piece of bread or cracker. Add more herbs, salt or honey if you feel it needs it.
  5. Shape and chill. Spoon the butter into a small jar or ramekin, or place it on baking paper and roll into a log. Chill in the fridge until firm.
